Buffalo Wing Bites are a delicious appetizer made with shredded chicken, cheese, and zesty buffalo sauce baked on mini rye bread slices. They’re cheesy, spicy, and perfect for game day, parties, or as a quick snack.

- 2 tablespoons grated Parmesan cheese
- 1 envelope ranch salad dressing mix, divided
- 1 cup mayonnaise
- 1 cup 2% milk
- 1/4 cup crumbled blue cheese, optional
- 1-1/4 cups finely chopped cooked chicken breast
- 1-1/4 cups shredded cheddar-Monterey Jack cheese
- 1/4 cup Buffalo wing sauce
- 1 tube (13.8 ounces) refrigerated pizza crust
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 375°F (190°C). Grease a baking sheet.
- In a bowl, whisk together mayonnaise, milk, Parmesan cheese, half of the ranch mix, and blue cheese if using. Set aside.
- In another bowl, combine chicken, cheddar-Monterey Jack cheese, Buffalo wing sauce, and remaining ranch mix.
- Unroll pizza crust and cut into small squares or circles to form bite-sized bases. Place on prepared baking sheet.
- Top each crust piece with the chicken mixture.
- Bake for 12–15 minutes or until golden brown and cheese is melted.
- Brush edges lightly with melted butter before serving.
- Serve warm with ranch or blue cheese dressing for dipping.
Notes
- Adjust the amount of Buffalo sauce to your spice preference.
- These can be prepped ahead of time and baked right before serving.
- Perfect to serve with celery sticks for a classic Buffalo wing feel.
