- 1 baguette, sliced into ½-inch rounds
- 2 tablespoons olive oil
- 2 garlic cloves, peeled
- 4 ounces goat cheese, softened
- 3 tablespoons mayonnaise
- 2 large tomatoes, diced
- 4 romaine lettuce leaves, torn
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix the softened goat cheese and mayonnaise until smooth. In another bowl, combine diced tomatoes with salt and pepper.
- Arrange baguette slices on the baking sheet and lightly brush each slice with olive oil.
- Toast in the oven for 8–10 minutes until golden. While still warm, rub the tops of the bread with a garlic clove.
- Spread a layer of goat cheese mayo on each toast. Add torn lettuce pieces and a spoonful of tomato mixture.
- Drizzle with balsamic glaze just before serving.
- Serve immediately and enjoy fresh.
