Ingredients

  • 1 baguette, sliced into ½-inch rounds
  • 2 tablespoons olive oil
  • 2 garlic cloves, peeled
  • 4 ounces goat cheese, softened
  • 3 tablespoons mayonnaise
  • 2 large tomatoes, diced
  • 4 romaine lettuce leaves, torn
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon balsamic glaze


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix the softened goat cheese and mayonnaise until smooth. In another bowl, combine diced tomatoes with salt and pepper.
  3. Arrange baguette slices on the baking sheet and lightly brush each slice with olive oil.
  4. Toast in the oven for 8–10 minutes until golden. While still warm, rub the tops of the bread with a garlic clove.
  5. Spread a layer of goat cheese mayo on each toast. Add torn lettuce pieces and a spoonful of tomato mixture.
