Ingredients

  • 2 tsp baking powder
  • 1 1/2 tsp baking soda

  • 2 tsp ground cinnamon

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans
  • 1 tsp vanilla extract

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, beat sugars, oil, and eggs until well combined.
  4. Gradually stir in the dry ingredients until just combined.
  5. Fold in carrots, pineapple, nuts, and vanilla extract.
  6. Pour batter into prepared pans and bake 30–35 minutes (round pans) or 40–45 minutes (9×13 pan), until a toothpick inserted in the center comes out clean. Let cool completely.
  7. To make frosting, beat cream cheese and butter until smooth. Add powdered sugar gradually, then vanilla, and beat until fluffy.
  8. Frost cooled cake layers or sheet cake generously with cream cheese frosting.
