Description

These beef and cheese stuffed sweet potatoes are the perfect balance of sweet, savory, and creamy. Roasted sweet potatoes are filled with seasoned ground beef and topped with melted cheddar cheese for a comforting, satisfying meal that works beautifully for weeknight dinners or meal prep.

  • 4 medium sweet potatoes, about 8 ounces each
  • 1 pound lean ground beef
  • 1 1/2 cups freshly shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook the ground beef with the diced onion and minced garlic, stirring frequently until the beef is browned and the onion is soft. Drain excess fat if needed, then stir in salt and black pepper.
  3. Rub the sweet potatoes with olive oil, place them on the prepared baking sheet, and pierce each one lightly with a fork.
  4. Roast the sweet potatoes for 45 to 50 minutes, or until fork tender. Remove from the oven and carefully slice each one open. Fluff the inside slightly with a fork.
  5. Spoon the seasoned beef mixture evenly into each sweet potato and top with shredded cheddar cheese.
  6. Return the stuffed sweet potatoes to the oven and bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  7. Remove from the oven, sprinkle with chopped fresh parsley, and serve warm.
