  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups barbecue sauce (store-bought or homemade)
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat grill to medium-high heat (375–400°F) or oven to 400°F (200°C).
  2. Pat chicken quarters dry with paper towels. Brush with olive oil.
  3. Mix smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper in a small bowl. Rub spice mixture evenly over chicken.
  4. Place chicken on grill grates skin-side down or arrange on a baking sheet if using the oven.
  5. Grill or bake for 35–40 minutes, turning halfway through, until internal temperature reaches 175°F (80°C) and skin is crisp.
  6. Brush chicken generously with barbecue sauce and cook for an additional 5–10 minutes, allowing sauce to caramelize.
  7. Remove from heat, rest for 5 minutes, then garnish with parsley before serving.
