Description
BBQ Chicken Quarters are juicy, flavorful chicken leg quarters seasoned with spices and slow-grilled or baked until tender, then coated in smoky barbecue sauce for a finger-licking family meal.
Ingredients
Scale
- 4 chicken leg quarters (about 2 1/2 to 3 lbs total)
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 1/2 cups barbecue sauce (store-bought or homemade)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat grill to medium-high heat (375–400°F) or oven to 400°F (200°C).
- Pat chicken quarters dry with paper towels. Brush with olive oil.
- Mix smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper in a small bowl. Rub spice mixture evenly over chicken.
- Place chicken on grill grates skin-side down or arrange on a baking sheet if using the oven.
- Grill or bake for 35–40 minutes, turning halfway through, until internal temperature reaches 175°F (80°C) and skin is crisp.
- Brush chicken generously with barbecue sauce and cook for an additional 5–10 minutes, allowing sauce to caramelize.
- Remove from heat, rest for 5 minutes, then garnish with parsley before serving.
Notes
- Use a meat thermometer for accuracy—dark meat is best at 175°F for tender results.
- For extra smoky flavor, grill over indirect heat with wood chips.
- You can marinate chicken in barbecue sauce overnight for deeper flavor.
