Ingredients
Scale
- 1 cup mashed bananas (about 2-3 ripe bananas)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 1-2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg, mashed bananas, and vanilla extract until well combined.
- Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until the edges are golden and the centers are set.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk powdered sugar with 1–2 tablespoons of milk until smooth. Drizzle over cooled cookies and let set before serving.
Notes
- Use very ripe bananas for best flavor and moisture.
- Let cookies cool completely before glazing to avoid melting.
- Add chocolate chips or chopped nuts for fun variations.
- Dough can be chilled or frozen for future baking.
