Ingredients
Scale
- 1 cup mashed bananas
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 1/4 teaspoons instant yeast
- 1 tablespoon ground cinnamon
- 3/4 cup whole milk, warm
- 6 tablespoons unsalted butter, softened
- 4 tablespoons unsalted butter, melted
- 1 large egg
- 2 teaspoons vanilla extract
- 4 ounces cream cheese
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 baking dish or line it with parchment paper.
- In a large bowl, mix warm milk, yeast, and granulated sugar. Let sit for 5 minutes. Add mashed bananas, softened butter, egg, and vanilla extract. Mix well. Gradually stir in flour until dough forms.
- Grease a bowl and place the dough inside. Cover and let rise in a warm spot for 1 hour or until doubled in size.
- Roll out the dough into a 10×16 inch rectangle. Brush with melted butter and sprinkle evenly with brown sugar and cinnamon. Roll tightly from the long side and slice into 12 even rolls using dental floss or a sharp knife.
- Place rolls in the prepared baking dish. Cover and let rise again for 30 minutes.
- Bake for 25–28 minutes until golden brown and puffed.
- While baking, whisk together cream cheese, powdered sugar, vanilla extract, and a splash of milk until smooth to create the glaze.
- Spread glaze over warm rolls and serve immediately.
Notes
- Use very ripe bananas for the best flavor and texture.
- Warm your milk to about 100°F to activate the yeast properly.
- Slice dough with unflavored dental floss for clean edges.
- Let the rolls cool slightly before glazing for perfect melt-in texture.
