Ingredients
- Chicken fillets: 4 medium pieces (about 1.5 pounds total)
- Cherry tomatoes: 1 cup
- Fresh spinach: 2 cups
- Garlic cloves: 4 cloves, minced
- Heavy cream: 1 cup
- Grated parmesan cheese: 1/2 cup
- Olive oil: 2 tablespoons
- Dried Italian herbs: 1 teaspoon
- Salt: 1/2 teaspoon
- Black pepper: 1/2 teaspoon
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine heavy cream, grated parmesan cheese, dried Italian herbs, salt, and black pepper, then stir until smooth.
- Heat olive oil in a large oven-safe skillet over medium heat. Add chicken fillets and sear for about 3 minutes per side until lightly golden.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in the cream mixture and stir gently to combine.
- Add cherry tomatoes and fresh spinach, letting the spinach start to wilt.
- Transfer the skillet to the oven and bake for about 20 minutes, until the chicken is cooked through and the sauce is bubbling.
- Let the dish rest for a few minutes so the sauce thickens slightly.
- Serve warm, spooning sauce and veggies over each portion.
