Ingredients

  • Chicken fillets: 4 medium pieces (about 1.5 pounds total)
  • Cherry tomatoes: 1 cup
  • Fresh spinach: 2 cups
  • Garlic cloves: 4 cloves, minced
  • Heavy cream: 1 cup
  • Grated parmesan cheese: 1/2 cup
  • Olive oil: 2 tablespoons
  • Dried Italian herbs: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Black pepper: 1/2 teaspoon


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine heavy cream, grated parmesan cheese, dried Italian herbs, salt, and black pepper, then stir until smooth.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Add chicken fillets and sear for about 3 minutes per side until lightly golden.
  4. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Pour in the cream mixture and stir gently to combine.
  6. Add cherry tomatoes and fresh spinach, letting the spinach start to wilt.
