Description

These Baked Tomatoes are a simple and flavorful side dish featuring ripe Roma tomatoes topped with olive oil, garlic, rosemary, and shaved Parmesan cheese, then baked until tender and aromatic.

Ingredients

Scale
  • 4 Roma tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 large clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 3/4 cup Parmesan cheese, shaved

Instructions

  1. Preheat oven: Heat oven to 375°F (190°C).
  2. Prepare tomatoes: Slice Roma tomatoes in half lengthwise and place cut side up on a baking sheet.
  3. Season: Drizzle olive oil over tomatoes, sprinkle with rosemary, minced garlic, salt, and black pepper.
  4. Bake: Bake for 15–20 minutes, or until tomatoes are tender and slightly caramelized.
  5. Add cheese: Remove from oven and sprinkle shaved Parmesan over the top. Return to oven for 2–3 minutes until cheese melts slightly.
  6. Serve: Serve warm as a side dish or appetizer.

Notes

  • Use ripe Roma tomatoes for the best flavor.
  • Fresh herbs enhance taste, but dried rosemary can be substituted in a pinch.
  • Optional: drizzle with balsamic reduction before serving for added depth.
