- 3 ripe avocados, halved and pitted
- 1 cup cherry tomatoes, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 small red onion, finely diced
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine cherry tomatoes, black beans, red onion, half the cheese, cilantro, olive oil, lime juice, salt, and pepper.
- Place avocado halves on the baking sheet. If needed, slice a small bit off the bottom to help them sit flat.
- Use a spoon to scoop out a bit more flesh from each avocado to make more space for the filling.
- Fill each avocado half with the mixture, slightly mounding the top.
- Sprinkle the remaining cheese over the filled avocados.
- Bake for 10 to 12 minutes until the cheese is melted and golden.
- Garnish with extra cilantro or chili flakes if desired, then serve warm.
Notes
- Use ripe but firm avocados to avoid mushiness.
- Make the filling ahead and store in the fridge for up to 2 days.
- Add crushed tortilla chips on top for extra crunch.
