Description

Tender shrimp and crisp broccoli baked together in foil packets with garlic, lemon, and buttery herbs. This simple oven dinner locks in flavor while keeping cleanup easy, making it perfect for quick weeknight meals.


Ingredients

  • 1 pound large raw shrimp, peeled and deveined
  • 2 cups fresh broccoli florets
  • 1 lemon, half juiced and half sliced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter, cut into small pieces
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C) and prepare four large sheets of aluminum foil on a baking sheet.
  2. In a mixing bowl combine shrimp, broccoli florets, olive oil, minced garlic, paprika, salt, and black pepper. Toss until evenly coated.
  3. Divide the shrimp and broccoli mixture evenly between the foil sheets.
  4. Add small pieces of butter and several lemon slices to each portion. Drizzle the lemon juice evenly over the packets.
  5. Fold the foil over the ingredients and seal tightly to create packets.
  6. Place the packets on a baking sheet and bake for about 15 minutes until the shrimp turns pink and opaque.
  7. Carefully open each packet, sprinkle with fresh parsley, and serve immediately.

Notes

  • Cut broccoli into small florets so it cooks evenly with the shrimp.
  • Do not overcook shrimp, remove from oven once shrimp turns pink.
  • Add chili flakes for a spicy version.
  • Serve with rice, pasta, or crusty bread to soak up the sauce.
