Description

A creamy, tangy, and incredibly easy pasta dish that brings together roasted cherry tomatoes, melty feta, and fresh herbs for a comforting meal packed with flavor.


Ingredients

Scale
  • 1 block (200g) feta cheese
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 12 oz (340g) pasta (penne or fusilli)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • A handful of fresh basil, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place cherry tomatoes in a baking dish and nestle the block of feta in the center.
  3. Sprinkle garlic and oregano over everything, drizzle with olive oil, and season with salt and pepper.
  4. Bake for 30-35 minutes until tomatoes burst and feta is golden.
  5. Meanwhile, cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
  6. Remove dish from oven, mash feta and tomatoes together to form a sauce.
  7. Add cooked pasta and toss to coat, using pasta water to adjust consistency if needed.
  8. Top with fresh basil and serve hot.

  • Add chili flakes for a spicy version.
  • Stir in spinach or roasted vegetables for extra nutrients.
