- 1 block (200g) feta cheese
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 12 oz (340g) pasta (penne or fusilli)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- A handful of fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Place cherry tomatoes in a baking dish and nestle the block of feta in the center.
- Sprinkle garlic and oregano over everything, drizzle with olive oil, and season with salt and pepper.
- Bake for 30-35 minutes until tomatoes burst and feta is golden.
- Meanwhile, cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
- Remove dish from oven, mash feta and tomatoes together to form a sauce.
- Add cooked pasta and toss to coat, using pasta water to adjust consistency if needed.
- Top with fresh basil and serve hot.

- Use high-quality feta in brine for the creamiest result.
- Add chili flakes for a spicy version.
- Stir in spinach or roasted vegetables for extra nutrients.
