Description

Indulge in the creamy goodness of a Bacon Ranch Mac & Cheese Quesadilla! This delicious fusion dish combines cheesy comfort with savory flavors, perfect for family dinners or gatherings.

Ingredients

Scale

Macaroni

  • 8 ounces of macaroni

Cheese Sauce

  • 2 cups of shredded cheddar cheese
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 2 cups of milk

Bacon and Dressing

  • 6 slices of crispy bacon, chopped
  • 1/2 cup of ranch dressing

Tortillas

  • 4 flour or corn tortillas

Butter for Cooking

  • 2 tablespoons of butter

Instructions

  1. Cook the Macaroni: Start by boiling water in a large pot. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce: In a saucepan, melt some butter over medium heat. Stir in flour to create a roux, then gradually add milk, whisking until smooth. Once thickened, add cheddar cheese and stir until melted and creamy.
  3. Mix in Bacon and Ranch: In a large bowl, combine the cooked macaroni, crispy bacon pieces, and ranch dressing. Pour the cheese sauce over the mixture and stir until everything is well combined.
  4. Assemble the Quesadilla: Take a tortilla and spread a generous amount of the mac and cheese mixture onto half of the tortilla. Fold the other half over to create a half-moon shape.
  5. Cook the Quesadilla: In a skillet, melt butter over medium heat. Place the quesadilla in the skillet and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and let it cool slightly before slicing.

Notes

  • Don’t Overcook the Macaroni: Cook just until al dente, as it will continue to cook when mixed with the cheese sauce.
  • Use Fresh Ingredients: Freshly grated cheese melts better than pre-shredded varieties.
  • Keep it Crispy: Make sure your skillet is hot enough before adding the quesadilla for a crispy exterior.
  • Experiment with Fillings: Don’t hesitate to try new flavors and textures by adding your favorite ingredients.
  • Let it Rest: Allow the quesadilla to sit for a minute after cooking to make slicing easier.
