- 1 bunch (about 1 pound) fresh asparagus, trimmed and cut into 1-inch pieces
- 1 cup crumbled feta cheese
- 4 large eggs
- 1/2 cup whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C). Place your pie dish on a baking sheet.
- In a bowl, whisk together the eggs, milk, cream, salt, and pepper until smooth. Stir in feta.
- Fit the pie crust into a 9-inch dish and pre-bake for 8–10 minutes if desired.
- Spread the asparagus evenly over the crust. Pour the egg mixture on top.
- Bake for 35–40 minutes until the center is just set and the top is golden.
- Let cool for at least 10 minutes before slicing and serving.
