- 2 large yellow onions, thinly sliced and caramelized
- 3 garlic cloves, minced
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika
Instructions
- Place a heavy-bottomed skillet over medium heat and let it warm up.
- Add sliced onions and cook for 10–15 minutes, stirring occasionally, until golden and caramelized.
- Lower heat to medium-low and add apples, garlic, and a splash of water to keep it moist.
- Sprinkle in brown sugar, smoked paprika, salt, and pepper. Stir until the mixture is coated and glossy.
- Let the mixture simmer gently for 20–25 minutes, stirring often. Add apple cider vinegar during the last 5 minutes.
- Remove from heat and let cool slightly. Use a fork or immersion blender to mash to your preferred texture.
- Spoon into a jar, seal tightly, and refrigerate. Serve chilled or warmed as desired.
