Ingredients

  • 3 cups Granny Smith apples, peeled and diced
  • ½ cup brown sugar

  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • 5 tablespoons chilled butter, cubed


Instructions

  1. Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter, then press into the base of the pan.
  3. In a large bowl, beat cream cheese, granulated sugar, and sour cream until smooth. Add eggs one at a time, then mix in vanilla extract.
  4. Pour cheesecake mixture over crust and smooth the top.
  5. In a saucepan, cook apples with brown sugar, cinnamon, nutmeg, and flour until slightly softened. Spread over cheesecake layer.
  6. Combine oats, flour, and chilled butter in a bowl until crumbly. Sprinkle evenly over the apple layer.
  7. Bake for 55–65 minutes, until edges are set and center jiggles slightly. Cool completely in the pan.
  8. Refrigerate for at least 4 hours or overnight before slicing and serving.
