- 2 tbsp mayonnaise

- Shrimp:
- 12 oz shrimp, frozen, deveined and tail off, thawed
- 1 tbsp cornstarch
- Vegetable oil, for frying
- Salt and pepper, to taste
- 1 head lettuce (butter lettuce recommended)
- 2 tbsp vegetable or olive oil, plus more as needed
Instructions
- Prepare sweet chili mayo: In a bowl, combine shredded cabbage, lime juice, rice vinegar, cilantro, red onion, sweet chili sauce, mayonnaise, sesame oil, salt, and pepper. Mix well and set aside.
- Prepare shrimp: Pat shrimp dry and toss with cornstarch, salt, and pepper until coated.
- Cook shrimp: Heat 2 tbsp oil in a skillet over medium-high heat. Fry shrimp 2–3 minutes per side until pink and cooked through. Remove from heat.
- Assemble wraps: Separate lettuce leaves and spoon cabbage mixture into each leaf. Top with cooked shrimp and garnish with additional cilantro.
- Serve: Serve immediately as a light meal or appetizer. Optionally drizzle with extra sweet chili sauce.
