  • Juice of 1 lime
  • 1 tsp rice vinegar (unseasoned)

  • 1 tbsp diced red onions
  • 2 tbsp sweet chili sauce
  • 2 tbsp mayonnaise
  • 1/2 tsp sesame oil
  • Salt and pepper, to taste
  • Shrimp:
  • 12 oz shrimp, frozen, deveined and tail off, thawed
  • 1 tbsp cornstarch
  • Vegetable oil, for frying
  • Salt and pepper, to taste
  • 1 head lettuce (butter lettuce recommended)
  • 2 tbsp vegetable or olive oil, plus more as needed


Instructions

  1. Prepare sweet chili mayo: In a bowl, combine shredded cabbage, lime juice, rice vinegar, cilantro, red onion, sweet chili sauce, mayonnaise, sesame oil, salt, and pepper. Mix well and set aside.
  2. Prepare shrimp: Pat shrimp dry and toss with cornstarch, salt, and pepper until coated.
  3. Cook shrimp: Heat 2 tbsp oil in a skillet over medium-high heat. Fry shrimp 2–3 minutes per side until pink and cooked through. Remove from heat.
  4. Assemble wraps: Separate lettuce leaves and spoon cabbage mixture into each leaf. Top with cooked shrimp and garnish with additional cilantro.
  5. Serve: Serve immediately as a light meal or appetizer. Optionally drizzle with extra sweet chili sauce.
